:: Overview ::
Reporting to the Executive Director, the Executive Chef will be responsible for the development, organization, implementation and evaluation of the overall quality of dietary services provided by the dietary department.

:: What You Will Do ::

Plan, develop, organize, implement and evaluate overall quality of dietary services by the dietary department.

Establish and develop job descriptions and performance evaluation criteria that delineate job responsibilities and expectations.
-
Interview, hire, orientate, train and evaluate all dietary staff.
-
Schedule staffing to ensure complement matches resident needs.
-
Ensure all members of dietary staff are knowledgeable and aware of the regulations, policies and procedures and follow them as outlined.

Ensure all staff is knowledgeable of and competent to act in the event of a fire, disaster and infectious disease.

Performs initial dietary assessments of residents’ needs.
-
Develop and revise Resident Allergy, Special Diet and Dislike regularly.
-
Inform the nursing department any changes in resident appetites.
-
Plan menus based on resident needs and preferences, seasonal and/or themed activities while following the Canada Food Guide.

Procure all supplies necessary for the preparation of all meals, special events and nourishments.

Develop and use standardized recipes.
-
Supervise and/or assist in meal preparation as well as meal service.

Complete incident/accident reports promptly and report them to the General Manager.

Is readily available to all dietary staff for problem consultation, for guidance in problem resolution and can demonstrate effective consultation skills with residents and families.

Coordinate quality assurance, infection control as well as health and safety programs as pertain to the dietary department.

Complete audits, inspections and reports as required.

Follow proper food handling techniques and sanitation procedures as outlined by facility policy and public health legislation.

Understand the “team building” process and consistently apply the principles.

Assist in all aspects of marketing of the facility, including coordinating and directing marketing activities, utilizing site staff, conducting tours and responding to inquiries.

Advise and contribute to staff development and education.

Hold regular department meetings.

Participate in facility committees and encourage dietary staff to do the same.

Assist General Manager in developing and maintaining departmental budget.
:: What You Will Bring ::
-
Graduate of Food Service Supervisor, Nutrition Management or Food & Beverage Management.
-
Red Seal Certificate a very strong asset.
-
Membership in or eligible for Ontario Society of Nutrition Management.
-
Minimum of 5 years of related experience in a long-term care, hospital or hotel setting in volume food preparation.
-
Must have working knowledge of special diets.

Excellent communication skills.
